The African map has a fantastic set of missions, culminating in the ghost wolf mission, which is truly wonderful. The Spanish map is pretty good but includes three types of goat, for which no callers are available. It also has Red deer, Roe deer and Boars. So three animals copy and pasted from Hirschfelden.Probably Medved, from what I've seen it has the most advantages with zones and accessibility. In reality, all the maps look like they have a boat load of zones either way, so it's just a matter of preference. But definitely check all your maps!
