I've increased harvest health but don't see any difference in my yield, it just takes longer. Harvest Health is in the Advanced tab -> Harvest Amount is in the General tab. both are in the Single Player Server settings on the Second menu so your close but in the wrong tab, it is odd they put these similar settings in different tabs but ...
